1. Rinse and slice the apricots.
2. Preheat a pan over medium heat adding olive oil.
3. Add the apricots and cook, stirring occasionally until caramelised. Remove from heat and set aside.
5. Place the watermelon, mint and onion in a bowl and also set aside.
6. For the dressing: whisk together balsamic vinegar, olive oil/hemp oil, and honey along with Elements CBD. Mix until well combined and season with salt and pepper. Grab a salad bowl and add the rocket, mint, and red onion. Pour the desired amount of dressing to the bowl and toss well.
7. Top with grilled apricots, watermelon, and add cheese.
